This is the best chicken enchilada recipe EVAH! I love how the tortillas and cream form a kind of custardy richness in the bottom of the dish. So yummy! Now I need to go make this deliciousness soon!!! (But it’s your corn chowder tonight!)
I would love to make these ahead of time and freeze them. I’d rather not bake them first. Do you think that would work?

I would think it would be fine! I haven’t done it … next time you make them to eat right away, put a couple in the freezer and see what happens, but I do think it should be OK.
I have frozen them! It works great. Definitely worth a try. So yummy!

It’s Heart of the Home pg. 94.
I added “The Heart of Home: Notes from a Vineyard Kitchen” to my gift registry for my wedding in 1988 and received it for my Wedding shower. It has become my all time favorite cookbook. Some of the recipes have become family favorites. This chicken enchilada recipe is still requested by my 22 year old son for his birthday dinner every year! The book is simply lovely and beautifully put together. The Vichyssoise, Stuffed Chicken with Pear Sauce….(oh I could go on and on) are just a couple of my ‘go to’ recipes. I have purchased probably hundreds of cookbooks since my wedding day, but only a precious 5 sit on my counter. This is one of them. It will be lovingly given to my daughter some-day.. but not to-day. Thank you Susan Branch!!

Hi..your recipe says to pour “extra” cream over the enchiladas. What are you referring to with the word extra. .? This recipe sounds delicious. Just want to make sure I understand it correctly.

It’s just any cream left over after you dip all the tortillas in it.

I made these enchiladas and the Chile casserole for company. I made a salad along with it instead of beans. Your recipes were fantastic. As also a native of CA I’ve never made enchiladas that were not in either a red or green sauce. I was thrilled to have a new recipe for these. Thank you!!

I made these for the first time last night along with your Chile Casserole. All I can say is YUMMMM!! This will be my go to recipe for Enchiladas from now on! I was so excited to see the title of your post that I actually got some tea and a blanket, with a dog attached ( marleygirl ) she’s my shadow, to read about your trip. I just moved to Vermont last summer from California over a weekend decision, literally, up and bought a house unseen and left California two weeks later like a crazy person! I already told you but wanted to remind you because you read so many posts how could you possibly remember all of the info you get in your responses. Anyway……..Isn’t it so cool? All the history, old barns that look like they’re going to collapse if somebody sneezes next to them, all of the quaint little restaurants in old houses with the most amazing food and the nicest people that have been working there for 20+ yrs. Its like traveling back in time. Buying your meat at the butchery, going to the bread and cheese store, dairy farms and the greatest farmers markets everywhere. Ive barely gone to a grocery store in months…..Amazon for all the rest 🙂 You drove through the worst storm of the year, of course, but thats all the more exciting especially with the men taking charge. Did you stop at the Northshire bookstore and get lost in there? I still am learning my way around here and couldn’t tell if you drove through Manchester. If not, maybe next time, you’ll love it! LOVE the pics and happy you guys are home safely. We are starting a remodel on a guest home on our property, tucked in the woods with a pond, tons of animals ( all friends even the cute black bear ) lots of space for another couple and you are welcome to use it if you so desire. We are keeping it as original as possible, old double fireplaces and views that just bring a smile to your face. Wont be done for awhile but when it is, Ill give you a shout! The suns starting to change…….I feel spring right around the corner! YAY.

We moved from AZ to Raleigh, NC with the idea to just have four seasons again. I have been a follower for 15 years and your recipes are simple elegant and homey. Home. The best word in all of languages and food, family and friends including all animals, plants and decor, nature and recipes…are what life is all about. The sound of nature in my new life is astounding. I love my new North Carolina! Trees, deer we feed every day, 5 new babies, squirrels, birds so many! And squirrels! Moles r cute too!

These enchiladas are legendary in our family. My dad made them for us growing up and now I get to make them for my family. Every time I ask my dad for the recipe of a dish I remember fondly, it’s always a Susan Branch recipe.

Noted in these responses is a reference to your, “Chili Casserole” recipe. I have checked my Susan Branch books and so far have been unable to locate the recipe. Hoping someone can give me some direction. Love the enchiladas recipe!
