    I make a beet salad similar to this. I roast the beets to preserve their flavor and use balsamic vinegar instead of red wine vinegar. Instead of sour cream, I add real maple syrup and cayenne, and I do use walnut chunks as you do. Feta cheese is also a good choice for the cheese.

      Someday try it with the red wine vinegar . . . it’s a bit sharper and adds good flavor. Although I LOVE balsamic vinegar too. The sour cream is dreamy and turns the whole thing pink.
