My older sister, Suzanne and I made a Bunny Cake like this for Easter many years ago when we were growing up. It was so much fun and we were so proud of ourselves. Now you have inspired me to make a Bunny Cake once again for my grandchildren, Colin – 9 and Mila – 7, that we will be visiting with in North Carolina tomorrow. Happy Easter Sue! So excited for the Willard! I just wanted to thank you, also…a few posts back, ( or maybe it was even further back when I reading posts) I believe you mentioned a hand cream, Curel/Ultra Healing. (I work in a high school so I am constantly washing my hands and looking for a really good hand cream.) I purchased a small tube to try and love it! It has really done a number on my dry “winter” cuticles!…So…thank you, thank you, thank you! Have a great weekend….hope the Easter Bunny is good to you!

I will have to make this cute one next year for the grandaughters to help. I bought the lamb cake pan and I am going to try and make him. Wish me luck. I wish the extra filling left over for the 8 inch cake pan would make this cake as I was wondering how to decorate it. Any ideas for the top as I bought canned white icing instead of trying to make the boiled icing for the lamb cake and the 8 inch and coconut to cover him. I am not very creative. Will be looking forward to the next Willard as I was reading past ones last night. Happy Easter everyone.

I make one of these every year! I usually use licorice (pull and peel strands) for whiskers and jelly beans for the eyes and nose. It’s to Easter without a bunny cake 🙂

My mom used to make a similar bunny cake (she used a rectangle pan to make the face and ears). Yours brings back very fond memories of our Easter celebration. It was a combination of a solemn occasion through Holy Saturday and a happy Easter Sunday with colored eggs, See’s chocolate eggs (buttercream – yum!) in colorful Easter baskets and of course a ham dinner with the trimmings later after Easter mass. We didn’t have much money but my mom made sure I knew the true meaning of Easter as well as providing a fun celebration. Wishing happy memories of Easter to all.

I used to make this cake when my daughter was little and it’s so do-able because you don’t need any special pans to make it. I loved it with the coconut on the frosting, but don’t think my daughter liked coconut so well. Thanks for putting it up here, it brings back memories. Love the bunny cake! It’s been an Easter tradition for over 30 years at my house….and this year I have a new assistant baker….little Miss Isabella, who is 2! We’re baking tonight. I bake a dark chocolate cake, frost with a homemade whipped marshmallow frosting, cover with coconut and decorate. Here’s the marshmallow frosting recipe…perfect with a deep chocolate cake: (I don’t have a double boiler so I use a larger pot on top of a smaller pot…it works 🙂 )
1/2 c sugar
2 egg whites
2 Tbls. water
1 jar (7oz) marshmallow fluff
1/2 tsp. vanilla
Combine sugar, egg whites and water and beat over boiling water in a double boiler till soft peaks form. Add marshmallow and beat till stiff. Remove from heat and beat in vanilla.

Hi Susan and Happy Easter to all of the girlfriends! Love your Bunny Cake. I just returned from one of our favorite central CA coastal towns, Arroyo Grande. Our youngest son is getting married there in October, and I was checking out the lodging, venue, etc. Fun times ahead!!! I also treated myself to an Easter present thanks to your recommendation; I bought a rose bush called “Just Joey.” Did I get the right one? I hope I remembered it correctly. What a beauty! My other current favorite is a newer one appropriately called “Easter Basket.” It is very fragrant and so prolific…just covered with gorgeous blooms. Nature provides us with such joy! Have a wonderful weekend:)
Just Joey is a wonderful rose. Prolific, healthy, disease free at least for us, gorgeous peach-colored roses with the MOST delicious fragrance. You are going to love it! Look at Julia Child someday . . . also gorgeous and fragrant, but it’s a bush.

Our traditional cake for Easter in the UK is usually a Simnel cake decorated with 11 balls of marzipan to represent Christ’s faithful disciples but I broke with tradition this year and decorated mine with crystallised viola flowers. Happy Easter greetings to you , Joe, Jack, and Girl Kitty from Florida!! I hope the Easter Bunny brings all of you some yummy treats to enjoy tomorrow too. Nothing like those chocolate easter eggs and marshmallow peeps peeking out of the basket grass to add that childhood flashback with morning tea. Did your mom hide everyone’s baskets in the house so that you had to find just yours and not let on when you saw a sister or brother’s??? I so remember all of us scurrying about looking for our cleverly hidden basket. That Easter Bunny knew just how to make us wait a tad bit longer. But oh the sweet reward at the end of your hunting!
She hid them all in the house — it was so much fun!
Maybe this was a tradition for those of us growing up in the 1950s as I don’t hear about people doing that now? It was part of the joy and anticipation of getting a basket for me. And when the basket was hidden in a spot that was hard to find, it was even more fun to keep searching.
One more question. We dyed 4 dozen eggs every year and my mom hid them Sunday afternoon for a big family egg hunt. EVERY year, there would be one egg we couldn’t find. It was hilarious when mom, all of us and a neighbor or two, joined in the search to try and find the thing too. Usually a month or two later, it was found in the flower garden where it had been hidden so cleverly that the egg color matched the surroundings perfectly! Did you ever have the same experience at your house on the egg hunt?
I’m sure that happened! What I remember most was the way my brothers would take off in all directions like wild things and start gathering eggs while the little ones ran around in circles sometimes crying because they didn’t know which way to go first!

Hi Susan, Running back & forth between my desktop & the kitchen (I know, I “could” take the desktop into the kitchen, but my hands are full of flour), making sure I have written down the recipe for the Lamb Cake correctly. When the recipe said to add the buttermilk, I didn’t see the amount on the recipe. Looks like it was left out of the ingredients on your page. I used my own judgment & added 1/2 Cup of buttermilk. Is that correct? Guess I’ll know when I see the cake, which is now in the oven baking. All of your tips were great, such as tying the two molds together so they won’t come apart. Had fun making the cake. There’s a lot of batter left over though. Guess I’ll make one more for a friend, or some cupcakes. Also, why does the recipe call for all the sifting? Guess I never learned that in cooking class. Does it make the cake lighter? (Sandy from Chihuahua Flats)
It’s one cup Sondra! Yikes, I hope I’m not too late. LAMB CAKE — I think I put the recipe up at first without that measurement, but I added it in a couple of days later (was alerted by kind girlfriend). Yes, I did that other bunny cake in the photos with the extra … or you can make cupcakes. Yes, sifting makes the cake much lighter. Measure out a cup of flour perfectly, now sift it and remeasure and you’ll see lots more flour than will fit into your cup. Hope that half cup of missing liquid doesn’t ruin the cake! I know he’ll LOOK good, but I want him to taste good too! xoxo
Susan, just so you know……the head fell off. I put it back on with toothpicks, but the lamb looks like a lion. Not to worry. It tastes good. I’ll have to practice with this one to get it right. I think it has a lot to do with:
-Pan being new, even though I did season it. Pans get better when used more.
-Instead of “melted” Crisco on the pans, next time, I’ll use solid Crisco, putting it on the pans with a paper towel with Crisco on it.
-Practicing with decorative icing. My lamb face is way too lionish, not lambish. Are there such words?
Anyway, it was fun making the cake. Cupcakes turned out well.

This year I made a carrot cake with ginger mascarpone frosting, and my hunch is that one piece of it will pack on a couple of pounds, although the beta carotene in the carrots will give it a healthy kick. Happy Easter to all! And a very belated Happy Birthday to you, Susan! I hope it was a glorious day for you! Apologies for the delay in my birthday greeings, but have been snowed under with work and gettig ready for the holiday weekend! I have been meaning to write to let you know that I have been making up the apple coleslaw recipe for a few weeks now and having it for lunch most days, and truly love it. I have not tired of it yet! My entire family loves it so have to make double batches of it so that I will have extra for just a couple of lunches at a time! We are hoping the cold weather leaves soon as it dipped down in the 30s again at night this week and we had to cover all of the seedlings coming up in the garden. I saw where New Engalnd was being hit as well with cold weather again, so hope you did not get anymore snow! I have read Emma Bridgewater’s new book of autobiographical vignettes of her life and really enjoyed it. It was really insprirational and admire her ambition to bring the potteries’ towns back to life in Britain and the craftsmanship as well. But reading her book just kindled the anticpation of when your new book will be published and just cannot wait until it is realeased. Please keep telling us about it!

I came across a lamb cake pan, except it is missing the back piece, but it worked okay. My daughter just finished decorating it to take to our family gathering later today. I used my Mother’s Chocolate Salad Dressing Cake recipe for it because our family likes chocolate cake the best. We are having sunny skies and warmer temps (Finally!) here in NW Ohio. My Primroses are blooming and so are my miniature Daffodils, so bright and cheerful! Looking forward to the new Williard!

Just my husband and me, my daughter and her boyfriend for Easter dinner — our dessert is Susan’s hot milk cake – mmmm all that wonderful vanilla. My daughter describes it as having cake with melted vanilla ice cream! Yes, that sums it up 🙂
